Method
Pasta Preparation
- 1
Cook the Fettuccine
Bring a large pot of salted water to a boil. Add fettuccine pasta and cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
Chicken Preparation
- 2
Prepare the Chicken
While the pasta cooks, season the chicken breasts with salt and black pepper on both sides.
- 3
Cook the Chicken
In a large skillet, heat olive oil over medium heat. Add the seasoned chicken breasts and cook for 6-7 minutes on each side, or until cooked through (internal temperature should reach 165°F). Remove from skillet and let rest for a few minutes before slicing.
Alfredo Sauce Preparation
- 4
Make the Alfredo Sauce
In the same skillet used for the chicken, melt the butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Pour in the heavy cream and bring to a simmer. Cook for 2-3 minutes, stirring occasionally.
- 5
Add Cheese
Gradually whisk in the grated Parmesan cheese until melted and the sauce is smooth. Season with additional salt and pepper to taste.
- 6
Combine with Pasta
Add the cooked fettuccine to the Alfredo sauce and toss to coat evenly. Slice the cooked chicken and place it on top of the pasta.
- 7
Garnish
Sprinkle the chopped parsley over the chicken and pasta for garnish before serving.
