Crust Preparation

Preheat the Oven
Preheat your oven to 350°F (175°C).

Mix the Crust Ingredients
In a medium bowl, combine 1.5 cups of graham cracker crumbs, 0.5 cups of granulated sugar, and 0.5 cups of melted unsalted butter. Mix until well combined.

Press the Mixture
Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake in the preheated oven for 10 minutes, then remove and let cool.
Cheesecake Filling Preparation

Beat the Cream Cheese
In a large mixing bowl, beat 24 oz of softened cream cheese with an electric mixer until smooth and creamy.

Add Sugar and Sour Cream
Gradually add 1 cup of granulated sugar and 0.5 cups of sour cream, mixing until well combined.

Mix in Vanilla and Eggs
Add 1 tsp of vanilla extract, then add the eggs one at a time, mixing well after each addition until the mixture is smooth.

Pour the Filling
Pour the cheesecake filling over the cooled crust in the springform pan.

Bake the Cheesecake
Bake in the preheated oven for 50-60 minutes, or until the center is set and the edges are lightly golden.

Cool and Chill
Turn off the oven and leave the cheesecake inside for another hour to cool gradually. Then, refrigerate for at least 4 hours or overnight.

Prepare the Berries
In a small bowl, mix 2 cups of fresh mixed berries with 1 tbsp of powdered sugar. Let sit for about 10 minutes to release juices.

Once the cheesecake has chilled, top it with the berry mixture and garnish with mint leaves to taste.
