Pickled Golden Beets

Cara Cara Vinaigrette

Method

Pickled Golden Beets

  1. 1

    Prep the Beets

Trim the tops and tails off the golden beets and wash them thoroughly.

  2. 2

    Cook the Beets

Place the beets in a pot of water, bring to a boil, and cook for about 30-40 minutes until fork-tender. Drain and let cool.

  3. 3

    Prepare Pickling Liquid

In a saucepan, combine white vinegar, water, sugar, salt, peppercorns, and the bay leaf. Bring to a boil, stirring until sugar and salt dissolve.

  4. 4

    Pickle the Beets

Once the beets are cool enough to handle, peel the skin off and slice them into rounds. Place the sliced beets in a jar and pour the hot pickling liquid over them. Let cool to room temperature before refrigerating for at least 2 hours, preferably overnight.

Burrata and Toppings

  1. 5

    Prepare Burrata

Remove the burrata cheese from its packaging and let it sit at room temperature for about 15 minutes for optimal flavor and texture.

  2. 6

    Toast the Pecans

In a dry skillet over medium heat, toast the Louisiana pecans for about 5 minutes or until fragrant. Stir often to prevent burning.

  3. 7

    Chop Fresh Herbs

Chop your choice of fresh herbs (basil, parsley, or dill) and set aside.

Cara Cara Vinaigrette

  1. 8

    Juice the Oranges

Cut the Cara Cara oranges in half and juice them into a bowl, removing any seeds.

  2. 9

    Combine Vinaigrette Ingredients

In a small bowl, whisk together the orange juice, olive oil, honey, Dijon mustard, salt, and black pepper until well combined.

Assembly

  1. 10

    Plate the Dish

On a serving platter, arrange the pickled golden beet slices. Tear the burrata and place it in the center.

  2. 11

    Garnish

Sprinkle the toasted pecans and chopped herbs over the beets and burrata.

  3. 12

    Drizzle Vinaigrette

Drizzle the Cara Cara vinaigrette over the entire dish before serving.
