Pickled Golden Beets

Prep the Beets
Trim the tops and tails off the golden beets and wash them thoroughly.

Pickle the Beets
Once the beets are cool enough to handle, peel the skin off and slice them into rounds. Place the sliced beets in a jar and pour the hot pickling liquid over them. Let cool to room temperature before refrigerating for at least 2 hours, preferably overnight.
Burrata and Toppings

Prepare Burrata
Remove the burrata cheese from its packaging and let it sit at room temperature for about 15 minutes for optimal flavor and texture.

Chop Fresh Herbs
Chop your choice of fresh herbs (basil, parsley, or dill) and set aside.
Cara Cara Vinaigrette

Juice the Oranges
Cut the Cara Cara oranges in half and juice them into a bowl, removing any seeds.

Combine Vinaigrette Ingredients
In a small bowl, whisk together the orange juice, olive oil, honey, Dijon mustard, salt, and black pepper until well combined.
Assembly

On a serving platter, arrange the pickled golden beet slices. Tear the burrata and place it in the center.
