Preparing the Coffee Base

Brew the Espresso
Brew 1 cup of strong espresso coffee and let it cool to room temperature.

Prep the Ladyfingers
In a shallow dish, pour the cooled espresso. Quickly dip each ladyfinger in the espresso, making sure they are soaked but not soggy. Set aside.
Making the Cream Mixture

Whisk the Egg Yolks
In a medium bowl, whisk together the 3 egg yolks and 2 tablespoons of granulated sugar until the mixture is pale and creamy.

Add Mascarpone
Gently fold in the 500 grams of mascarpone cheese and 1 teaspoon of vanilla extract until well combined.

Whip the Cream
In a separate bowl, whip 1 cup of heavy cream until stiff peaks form.

Combine Mixtures
Carefully fold the whipped cream into the mascarpone mixture until smooth and fluffy.
Assembling the Tiramisu

Layer the Ingredients
In a 9x9 inch square dish, arrange half of the soaked ladyfingers at the bottom. Spread half of the mascarpone cream mixture over the ladyfingers.

Repeat Layers
Add another layer of soaked ladyfingers on top of the cream and then spread the remaining mascarpone cream on top.

Chill and Dust
Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight. Before serving, dust the top with 2 tablespoons of unsweetened cocoa powder and garnish with dark chocolate shavings.
