Crust Preparation

Make the Crust
In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined and the mixture resembles wet sand.

Form the Crust
Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Use the bottom of a measuring cup for even pressure.

Pre-bake the Crust
Preheat your oven to 350°F (175°C). Bake the crust in the preheated oven for 8-10 minutes until lightly golden. Remove and let cool.
Cheesecake Filling Preparation

Prepare the Filling
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

Add Sugar and Vanilla
Gradually add the sugar and vanilla extract to the cream cheese, mixing until well combined.

Incorporate Eggs
Add the eggs one at a time, mixing on low speed until just blended. Do not overmix.

Mix in Sour Cream
Finally, add the sour cream and mix until smooth and creamy.

Bake the Cheesecake
Pour the cheesecake filling over the cooled crust. Bake in the oven at 325°F (160°C) for 55-60 minutes or until the edges are set but the center is slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.

Chill the Cheesecake
Remove from the oven and refrigerate for at least 4 hours, or overnight for best results.
Strawberry Glaze Preparation

Prepare the Glaze
In a saucepan over medium heat, combine the sliced strawberries, sugar, cornstarch, water, and lemon juice.

Cook the Glaze
Cook while stirring until the mixture comes to a boil and thickens, about 5-7 minutes.

Cool the Glaze
Remove from heat and let it cool to room temperature before spreading over the cheesecake.
Assembly

Top the Cheesecake
Once the cheesecake has chilled, spread the cooled strawberry glaze evenly over the top of the cheesecake.
