Roast the Vegetables
Preheat your oven to 425°F (220°C). Chop the zucchini, red bell pepper, yellow bell pepper, red onion, and mushrooms into bite-sized pieces. Toss them in a bowl with olive oil, salt, and black pepper. Spread the vegetables evenly on a baking sheet and roast in the oven for 20-25 minutes, or until tender and slightly caramelized.

Prepare the Panini
While the vegetables are roasting, prepare your bread. You can use ciabatta, focaccia, or any sturdy bread of your choice. Once the vegetables are done, take them out of the oven and let them cool slightly.

Assemble the Sandwich
Layer the roasted vegetables on one slice of the bread. Add cheese if desired (mozzarella or goat cheese work well). Top with another slice of bread.

Grill the Panini
Preheat a panini press or a skillet over medium heat. Grill the sandwich for about 3-5 minutes on each side, until the bread is golden brown and crispy, and the cheese is melted.

Serve
Remove the panini from the heat, slice in half, and serve warm.
