Method

Preparing the Fish

  1. 1

    Clean and Marinate the Fish

Rinse the whole fish under cold water and pat dry with paper towels. In a bowl, mix olive oil, lemon juice, minced garlic, chopped parsley, salt, and black pepper. Rub this mixture all over the fish, including the cavity. Let it marinate for at least 30 minutes.

  2. 2

    Preheat the Grill

Preheat your grill to medium-high heat. If using a charcoal grill, ensure the coals are hot and covered with ash.

Cooking the Fish

  1. 3

    Grill the Fish

Place the marinated fish on the grill and cook for about 6-8 minutes on each side, or until the fish flakes easily with a fork and has nice grill marks.

  2. 4

    Remove and Rest

Once cooked, remove the fish from the grill and let it rest for a few minutes before serving.

Preparing the Sides

  1. 5

    Prepare Seasonal Sides

Toss asparagus and cherry tomatoes with olive oil, salt, and black pepper. Grill them alongside the fish for the last 10 minutes of cooking, until they are tender and slightly charred.

Serving

  1. 6

    Plate and Serve

Serve the grilled fish with the seasonal sides on a large platter, garnished with additional chopped parsley and lemon wedges if desired.
