Taro Patty Preparation

    Cook Taro

    Peel and cube the taro root, then steam until tender, about 20 minutes. Mash the cooked taro in a bowl.

    Mix Ingredients

    In the bowl with mashed taro, add flour, cornstarch, salt, and black pepper. Mix until combined.

    Form Patties

    Shape the mixture into burger-sized patties.

    Fry Patties

    Heat oil in a frying pan over medium heat. Fry the patties until golden and crispy, about 3-4 minutes per side. Drain on paper towels.

Mushroom & Onion Pickling

    Prepare Pickling Liquid

    In a saucepan, combine vinegar, sugar, salt, and water. Bring to a boil, then remove from heat.

    Pickle Vegetables

    Place the sliced mushrooms and onions in a jar. Pour the hot pickling liquid over the vegetables. Let it cool, then refrigerate for at least 30 minutes.

Herb Aioli Preparation

    Mix Aioli

    In a bowl, combine mayonnaise, minced garlic, chopped fresh herbs, and lemon juice. Mix well and set aside.

Assembly

    Assemble Burger

    On the bottom half of each burger bun, place a crispy taro patty, a slice of smoked mozzarella cheese, pickled mushrooms and onions, and a generous dollop of herb aioli. Top with the other half of the bun and serve.
