Braised Short Ribs

Season the Short Ribs
Pat the beef short ribs dry and season generously with salt and black pepper.

Sear the Ribs
In a large Dutch oven, heat the olive oil over medium-high heat. Add the short ribs and sear on all sides until browned. Remove and set aside.

Braise the Ribs
Return the short ribs to the pot and add the beef broth, thyme, and bay leaves. Bring to a simmer, cover, and reduce heat to low. Cook for 3 hours or until the meat is tender and falls off the bone.

Shred the Meat
Remove the ribs from the pot and let cool slightly. Shred the meat, discarding the bones and any excess fat.

Assemble the Sandwich
On each hoagie roll, layer shredded short rib, caramelized onions, bell peppers, and top with smoked mozzarella cheese.

Melt the Cheese
Place the assembled sandwiches under a broiler for 2-3 minutes until the cheese is melted and bubbly.

Strain the reserved braising liquid to remove solids. Heat in a small saucepan until warm for dipping.
