Proteins & Meats
- 1
In a skillet over medium heat, cook the bacon until crisp. Remove to paper towels to drain, reserve the rendered fat if desired.
- 2
Season the chicken thighs with salt and pepper. Set up a dredging station: flour seasoned with paprika, garlic powder, onion powder, salt, and pepper; a bowl of buttermilk for dipping.
- 3
Dredge each chicken thigh in the seasoned flour, dip in buttermilk, then dredge again in flour to coat well. Let rest 5–10 minutes to set.
- 4
Heat oil in a heavy-bottomed pan to about 350°F (175°C). Fry the chicken until deep golden and the internal temperature reaches 165°F (74°C). Drain on a rack.
- 5
Keep fried chicken warm in a 200°F (93°C) oven while finishing other components.
Dairy
- 6
Place Swiss cheese slices on the hot fried chicken to melt slightly from the heat.
- 7
If needed, tent with a light foil cover to prevent over-melting while assembling.
Bakery
- 8
Split the English muffin and toast the halves until lightly golden. Lightly butter if desired and keep warm.
