    Prep greens

    Rinse the mixed greens under cold water and spin dry until completely dry. If needed, pat with a towel.

    Slice strawberries

    Hull the strawberries and cut into 1/4-inch slices. Keep refrigerated until ready to assemble.

    Prepare reduction

    If using store-bought pear balsamic reduction, gently warm it in a small bowl. If making from scratch, simmer pear juice with balsamic until thick and syrupy, about 10-12 minutes.

    Candied walnuts

    In a dry skillet over medium heat, toast candied walnuts for 2-3 minutes until fragrant. Remove from heat and allow to cool.

    Crumb cheese

    Crumble the gorgonzola cheese into small pieces and set aside.

    Chicken (optional)

    If adding chicken, season two chicken breasts with a pinch of salt and pepper and grill until cooked through, about 6-7 minutes per side. Let rest 5 minutes, then slice thinly.

    Assemble

    To plate, divide greens among four plates. Top with strawberries, candied walnuts, and crumbled gorgonzola. If using chicken, layer slices on top. Drizzle pear balsamic reduction over each salad. Finish with salt and pepper to taste.
