    Season the steak

    Pat the flank steak dry with paper towels. Rub with olive oil (2 tbs) and season with salt (1 tsp) and black pepper (1 tsp). Finely mince 2 cloves garlic and rub onto the steak along with 1 sprig of fresh rosemary. Let sit for 15-30 minutes to flavor.

    Grill or pan-sear the steak

    Preheat grill or heavy skillet to high. Sear the steak for about 3-4 minutes per side for medium-rare, or to your desired doneness. Remove from heat and let rest for 5-10 minutes before slicing.

    Prepare fries

    Wash and cut russet potatoes into evenly sized fries. Pat them dry thoroughly. Heat vegetable oil in a deep pot to about 360-365°F (182-185°C). Fry the potatoes in batches until crisp and pale golden, about 4-5 minutes per batch. Drain on paper towels and season with salt and paprika while hot.

    Sauté mushrooms

    In a skillet, melt butter over medium heat. Add 1 clove minced garlic and sauté 30-60 seconds until fragrant. Add button mushrooms and cook until browned and tender, about 5-7 minutes. Stir in thyme leaves and season with salt and black pepper to taste.

    Plate and serve

    Slice the rested steak against the grain. Plate with a side of fries and sautéed mushrooms. Garnish with an extra sprig of rosemary if desired and serve immediately.
