    Marinate and season steak

    Whisk together olive oil, balsamic vinegar, garlic powder, salt, and pepper. Pat the flank steak dry and rub with the marinade. Let rest 20-30 minutes.

    Preheat grill

    Preheat grill to high heat (approximately 450-500°F / 230-260°C).

    Grill steak

    Grill steak 4-6 minutes per side for medium-rare, adjusting time for thickness. If substituting with shrimp, chicken, or ahi: use shorter times (shrimp 2-3 min per side; chicken 6-7 min per side to 165°F; ahi 1-2 min per side) and monitor doneness.

    Rest and slice

    Transfer steak to a cutting board and rest 5-10 minutes. Slice thinly against the grain.

    Plating

    Rinse the salad bowl if needed. Arrange sliced steak on top of the Caesar salad or serve alongside. Garnish with extra Parmesan if desired.

Caesar Salad

    Prepare greens

    Wash and trim romaine; pat dry and chop into bite-sized pieces. Place in a large salad bowl.

    Make dressing

    In a small bowl, whisk together anchovy paste, minced garlic, lemon juice, Dijon mustard, Worcestershire, and mayonnaise. Drizzle in olive oil while whisking until smooth. Season with salt and pepper.

    Toss and finish

    Pour dressing over the romaine and toss to coat. Add grated Parmesan and croutons; toss gently.
