Add diced onion and cook 5–7 minutes until translucent.

Stir in minced garlic and cook 30 seconds.

Pour in crushed tomatoes and vegetable broth; bring to a simmer.

Simmer 15 minutes to let flavors meld.

Stir in fresh basil and cook for 2 more minutes.

Season with salt and pepper.

If desired, whisk in sour cream and adjust consistency with water as needed.

Using an immersion blender, blend until smooth.

Ladle soup into bowls and garnish with toasted pine nuts and a dollop of sour cream; finish with fresh basil.

Preheat oven to 425°F (220°C). Halve the tomatoes, toss with a little olive oil, salt, and pepper, and roast on a baking sheet for 15–20 minutes until lightly caramelized.

While tomatoes roast, halve and pit the avocado, then slice into thin strips.

Spread butter on one side of each bread slice.

Assemble sandwiches: place cheddar on the non-buttered side of two slices, layer avocado slices and roasted tomato slices, then top with the remaining cheddar and bread slices.

Cook in a skillet over medium heat, 3–4 minutes per side, until bread is golden brown and cheese melts.

Slice sandwiches and serve alongside the hot soup.
