Patty Melt Instructions

Prep onions and season beef
Peel and slice the yellow onion. Divide the ground organic beef into two equal portions and gently shape into patties about 3/4 inch thick. Season both sides with 0.5 tsp salt and 0.25 tsp black pepper.

Caramelize onions
In a skillet, melt 1 tablespoon butter with 1/2 teaspoon olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook slowly, stirring occasionally, until deeply golden and sweet, about 15-20 minutes. Set aside.

Cook beef patties and melt cheese
Increase heat to medium-high. In the same skillet, cook the beef patties 3-4 minutes per side until browned and mostly cooked through. In the last minute of cooking, lay Swiss cheese slices on top of each patty to melt.

Toast bread and apply dressing
In a separate skillet, melt the remaining 1 tablespoon butter. Lightly toast the rye bread slices in the buttered skillet until the outsides are golden. Spread 2 tablespoons of 1000 Island dressing on the inner side of the bottom bread slice and 2 tablespoons on the inner side of the top bread slice.

Grill until melty and serve
Return the assembled sandwich to the skillet and cook over medium heat, pressing with a spatula, until the bread is deeply golden and the cheese is fully melted, about 2-4 minutes per side. Remove, let rest 1-2 minutes, then slice in half and serve.
