    Prepare tots

    Preheat the oven to 425°F (220°C). Spread the bag of potato tots on a lined baking sheet and bake for 18–22 minutes, until crisp and lightly golden.

    Toast sourdough

    While tots bake, toast the 4 slices of sourdough until golden and lightly crispy. Set aside.

    Cook bacon

    In a skillet over medium heat, cook the 6 slices of bacon until crisp and browned. Transfer to paper towels to drain.

    Cook eggs

    In the same skillet, cook 2 eggs sunny-side up until whites are set and yolks remain runny. Season lightly with a pinch of salt if desired.

    Melt cheese

    Place the 2 slices of cheddar cheese on top of the eggs during the last 30 seconds to melt.

    Prepare toppings

    Slice the avocado into thin wedges. Rinse and dry the lettuce leaves. Slice the tomato into rounds.

    Assemble sandwich

    Spread mayonnaise on one side of each sourdough slice. On the bottom slice, layer avocado, then bacon, followed by the cheesy eggs, tomato slices, and lettuce. Top with the remaining sourdough slice, mayo-side down.

    Serve

    Slice the sandwich in half if desired and plate with the hot tots on the side. Enjoy immediately.
