Marinate chicken
Pat the chicken breasts dry. In a bowl, whisk together teriyaki sauce and a pinch of black pepper. Add the chicken and toss to coat. Let marinade for 20-30 minutes to infuse flavor.

Prepare pineapple and chips
Slice pineapple into thick rounds if needed. Lightly brush with a touch of oil. Place Maui chips in a sealable bag and crush gently to a coarse texture for topping later.

Toast buns
Split the buns and lightly toast them on a grill or in a toaster until just golden and fragrant.

Grill pineapple
Grill pineapple slices over medium heat for 2-3 minutes per side until caramelized and slightly charred. Remove and keep warm.

Cook chicken and melt cheese
Grill the marinated chicken over medium-high heat until cooked through (internal temperature 165°F / 74°C), about 6-7 minutes per side depending on thickness. In the last minute of cooking, place Swiss cheese slices on each breast to melt.

Assemble greens and base
Spread aioli on the cut sides of the bottom buns. Layer with lettuce leaves and tomato slices on each bottom bun.

Build the burger
Place each cheese-melted chicken breast on the bottom bun. Top with a grilled pineapple slice. Sprinkle the crushed Maui chips over the pineapple for extra crunch.

Add heat and finish
Drizzle spicy red pepper sauce over the toppings, crown with the top bun, and serve immediately.
