    Preheat and prep

    Preheat oven to 450°F (230°C). Line a baking sheet with parchment paper.

    Prepare potatoes

    Wash and dry two Russet potatoes. Cut into matchsticks about 2–3 mm thick. Rinse to remove surface starch and pat completely dry.

    Make spice blend

    In a small bowl, whisk together brown sugar, smoked paprika, black pepper, garlic powder, salt, and cayenne pepper.

    Coat fries

    In a large bowl, toss the potato matchsticks with olive oil until evenly coated. Sprinkle cornstarch over and toss to coat. Add the spice blend and toss again until all fries are evenly coated.

    Bake and crisp

    Spread fries in a single layer on the prepared sheet. Bake for 15–20 minutes, then flip and bake another 10–15 minutes until crisp and golden. If desired, broil for 1–2 minutes to increase crispness.

    Serve

    Remove from oven, let rest 1–2 minutes, and serve hot with your favorite dipping sauces.
