Burgers & Witches

Method

Burgers & Witches

  1. 1

Prep the toppings: rinse lettuce and tomato; pat dry. Slice the red onion and jalapeños. Crumble bleu cheese if needed. Crush tortilla chips into coarse crumbs. In a small bowl, whisk aioli with hot sauce to create a spicy aioli.

  2. 2

Shape the beef into a single patty about 1/2 inch thick. Create a small indentation in the center to help the patty cook evenly.

  3. 3

Preheat a skillet, griddle, or grill over medium-high heat.

  4. 4

Lightly toast the burger bun halves on the grill or in a dry skillet until golden; remove and set aside.

  5. 5

Cook the beef patty for about 4-5 minutes per side for medium doneness, or until the desired internal temperature is reached. Let the patty rest for 1-2 minutes after cooking.

  6. 6

Assemble the base: spread a thin layer of spicy aioli on the bottom bun. Layer with lettuce leaves, tomato slices, and red onion slices. Place jalapeño slices on top.

  7. 7

Place the cooked beef patty on the stacked vegetables. Top with crumbled bleu cheese and sweet tomato chutney. Sprinkle crushed tortilla chips over the chutney for extra crunch.

  8. 8

Top with the prepared top bun. Serve immediately, with extra tortilla chips on the side if desired.
