    Prepare the dip base

    In a medium bowl, whisk together sour cream and French onion soup mix until smooth.

    Flavor the dip

    Stir in minced garlic, lemon juice, and chopped chives. Taste and adjust with more lemon juice or salt if needed. Refrigerate 30–60 minutes to meld flavors.

    Chill the dip

    Keep the dip chilled while you make the chips.

    Prep the potatoes for chips

    Rinse the potatoes and slice very thin (about 1 mm) using a sharp knife or mandoline. Pat dry with paper towels to remove surface moisture.

    Heat the oil

    In a heavy pot or deep fryer, heat the neutral oil to 170–180°C (340–360°F).

    Fry the chips

    Fry potato slices in small batches until crisp and lightly golden. Remove with a slotted spoon, drain on paper towels, and season with sea salt while still hot.
