Chili Base

Method

Fries

  1. 1

Preheat oven to 425°F (220°C). Arrange frozen french fries on a baking sheet in a single layer. Bake for 18–22 minutes, turning once halfway, until crisp and lightly browned.

  2. 2

Keep fries warm while chili finishes.

Chili Base

  1. 3

Heat olive oil in a large pot over medium heat.

  2. 4

Add ground turkey and cook, breaking up with a spoon, until browned through, about 5–7 minutes.

  3. 5

Stir in minced garlic and cook for 30 seconds until fragrant.

  4. 6

Sprinkle chili powder, ground cumin, smoked paprika, cayenne pepper, and salt over the turkey. Stir and cook for 1 minute to bloom the spices.

  5. 7

Pour in crushed tomatoes and chicken broth; bring to a simmer.

  6. 8

Reduce heat to low and simmer 15–20 minutes, stirring occasionally, until flavors meld and the sauce thickens.

  7. 9

If using black beans, stir in the drained beans during the last 5 minutes of simmering.

Assembly

  1. 10

Spread a bed of hot fries on a platter or individual plates.

  2. 11

Ladle the turkey chili over the fries.

  3. 12

Sprinkle shredded cheddar cheese over the chili and allow it to melt, about 1–2 minutes.

  4. 13

Top with diced jalapeños and red onion.

  5. 14

Finish with crushed tortilla chips for extra crunch.

  6. 15
