Marinate chicken
In a bowl, whisk together olive oil, paprika, smoked paprika, garlic powder, onion powder, salt, black pepper, and lemon juice. Add chicken tenders and toss to coat. Let sit 20-30 minutes to absorb flavors. If desired, refrigerate up to 2 hours.

Make tomato chutney
In a saucepan over medium heat, warm a teaspoon of olive oil. Add onion and garlic; sauté 3-5 minutes until translucent. Stir in grated ginger and chili flakes. Add diced tomatoes, tomato paste, brown sugar, salt, pepper, and vinegar. Bring to a simmer, reduce heat, and cook 15-20 minutes until chutney thickens. If too thick, add a splash of water.

Cook chicken
Choose your method: grill or fry. For grilling, preheat grill to medium-high. Thread marinated chicken and grill 3-4 minutes per side until cooked through (internal temperature 165°F / 74°C). For frying, heat oil in a deep skillet to 350°F / 175°C. Fry chicken in batches 3-5 minutes until golden and cooked through. Drain on paper towels.

Toss with chutney
In a large bowl, toss the hot chicken with the prepared tomato chutney until evenly coated. Allow to rest 2-3 minutes for the flavors to meld.

Serve
Serve hot as a snack or main with sides like rice, naan, or crisp vegetables. Garnish with chopped cilantro and lime if desired.
