Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish with 1 tablespoon of butter; set aside.

In a large bowl, whisk together eggs, milk, heavy cream, vanilla, cinnamon, nutmeg, salt, and brown sugar until well combined.

Spread the 6 cups brioche bread cubes in the prepared dish. Pour the custard evenly over the bread and gently press to ensure all cubes soak up liquid. Fold in half of the sliced strawberries and dot with the melted butter (3 tablespoons).

Let the mixture soak for 15 minutes, turning once to ensure all pieces are moistened.

Meanwhile, cook the bacon in a skillet over medium heat until crispy. Transfer to paper towels to drain.

While it finishes baking, warm the maple syrup for serving.

Slice the baked French toast. Top with the remaining sliced strawberries. Drizzle with maple syrup and serve with crispy bacon on the side. Dust with powdered sugar if desired.
