Sausage and spice
In a large skillet, cook the breakfast sausage over medium-high heat until browned and crumbly, 6-8 minutes. Break the sausage into small pieces as it browns. Sprinkle in smoked paprika and ground cumin for a warm, morning flavor; season with a pinch of salt and black pepper.

Sauté vegetables
Add the diced onion, red bell pepper, and green bell pepper to the skillet with the sausage. Cook over medium heat until the vegetables are softened and lightly caramelized, about 5 minutes. Add minced garlic for the last 30-60 seconds and stir to release aroma. If the sausage rendered little fat, drizzle in 1-2 tablespoons olive oil to help sauté.

Make avocado crema
In a blender or bowl, combine the avocado flesh for crema, sour cream, lime juice, cilantro (if using), and a pinch of salt. Blend until smooth and creamy. Taste and adjust salt or lime as needed.

Fry avocado slices
Slice the remaining two avocados for frying. Lightly coat if desired with a touch of flour or cornstarch, and fry in neutral oil over medium heat until golden on both sides. Season with a pinch of salt.

Assemble burritos
Warm the flour tortillas. Layer each tortilla with a portion of the sausage-vegetable mixture, scrambled eggs, and a handful of shredded cheddar. Drizzle with avocado crema and place 2-3 fried avocado slices on top. Sprinkle extra cheddar if desired.

Bake tots
Spread the tater tots on a baking sheet and bake or air-fry according to package directions until crisp and golden, about 18-22 minutes. Season with a little salt if desired.
