    Prep & oven

    Position a rack in the center of the oven and preheat to 425°F (220°C). Line a sheet pan with parchment for easy removal.

    Whisk dry ingredients

    In a large mixing bowl, whisk together all-purpose flour, baking powder, baking soda, sugar, and salt until evenly distributed.

    Cut in butter

    Add cold butter cubes to the dry ingredients. Using a pastry blender or two knives, cut the butter into the mixture until it resembles coarse crumbs with small pea-sized pieces of butter remaining.

    Add buttermilk & form dough

    Pour in the cold buttermilk and stir gently with a fork just until the dough comes together and no dry flour remains. Do not overwork.

    Shape biscuits

    Turn the dough onto a lightly floured surface. Knead gently 6–8 times only to bring it together. Pat into a 1-inch thick rectangle. Cut into rounds with a 2-inch cutter. Re-roll scraps once to make additional biscuits.

    Bake & finish

    Place biscuits on the prepared sheet pan, about 1 inch apart. Bake 12–15 minutes until tops are golden brown and a toothpick comes out clean. Optional: brush the tops with a little melted butter while hot.

Gravy

    Brown sausage

    In a skillet over medium heat, crumble and cook the sausage until evenly browned and no pink remains. If there's a lot of fat, spoon some off.

    Make roux

    Sprinkle flour over the sausage and cook, stirring constantly, 1–2 minutes to remove raw flour taste.

    Add milk

    Slowly whisk in the milk, scraping up any browned bits from the pan. Increase heat to medium and simmer, stirring frequently, until the gravy thickens to your liking (about 5–7 minutes).

    Season & adjust

    Season with salt and black pepper to taste. If too thick, whisk in a splash more milk to reach desired consistency.
