    Preheat and prep

    Preheat oven to 200°C (400°F) and position a rack in the middle.

    Roast beetroot

    Wash the beetroot, wrap in foil, and roast in the oven for 45-50 minutes until tender. Let cool, peel, and slice into 1/4-inch rounds.

    Mint dressing

    In a bowl, whisk together plain yogurt, finely chopped mint leaves, lemon juice, and a pinch of salt until smooth. Taste and adjust salt as needed; refrigerate until ready to use.

    Prepare lamb patties

    In a bowl, mix ground lamb with fine sea salt (for lamb patties), black pepper, and garlic powder. Divide into two even portions and shape into patties about 1 inch thick.

    Cook patties and melt cheese

    Heat olive oil in a skillet over medium-high heat. Cook patties 3-4 minutes per side for medium, flipping once. In the last minute, crumble blue cheese over each patty and let it melt.

    Toast buns and prep toppings

    Split buns and lightly toast until golden. Rinse lettuce, slice tomato, and separate red onion rings.

    Assemble the burgers

    Spread aioli on the bottom bun. Layer lettuce, tomato, red onion, and the lamb patty with melted blue cheese. Spoon mint dressing over the patty, add roasted beetroot slices, and drizzle with sweet tomato chutney. Cap with the top bun.

    Optional egg addition

    If using the optional egg, fry one egg to your liking and place it on top of the patty before closing the burger. Note: this addition may incur a surcharge of $2.
