Sandwich Assembly

Method

Marinating the Chicken

  1. 1

    Prepare the Marinade

In a large bowl, mix together buttermilk, hot sauce, salt, black pepper, garlic powder, and onion powder until well combined.

  2. 2

    Marinate the Chicken

Add the chicken pieces to the marinade, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours, preferably overnight.

Coating the Chicken

  1. 3

    Prepare the Coating

In a separate bowl, combine all-purpose flour, cornstarch, paprika, cayenne pepper, salt, and black pepper.

  2. 4

    Coat the Chicken

Remove the chicken from the marinade, allowing excess liquid to drip off. Dredge each piece in the flour mixture until fully coated, then shake off excess flour.

Frying the Chicken

  1. 5

    Heat the Oil

In a large, heavy-bottomed pot or deep fryer, heat vegetable oil to 350°F (175°C).

  2. 6

    Fry the Chicken

Carefully add the coated chicken pieces to the hot oil in batches. Fry for about 8-10 minutes, or until golden brown and cooked through. Use a meat thermometer to ensure the internal temperature reaches 165°F (75°C).

  3. 7

    Drain the Chicken

Once cooked, remove the chicken from the oil and place on a wire rack or paper towels to drain excess oil.

Assembling the Sandwich

  1. 8

    Toast the Buns

While the chicken drains, lightly toast the brioche buns on a skillet or griddle until golden brown.

  2. 9

    Build the Sandwich

Spread mayonnaise on the bottom half of each bun. Add a piece of fried chicken, a leaf of romaine lettuce, a slice of tomato, and pickles. Top with the other half of the bun.

  3. 10

    Serve

Serve the sandwiches immediately while hot and crispy.
