Prepare the Pasta

    Cook the Spaghetti

    Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes. Reserve 1 cup of pasta water before draining the spaghetti.

Prepare the Sauce

    Mix the Sauce Ingredients

    In a mixing bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined. Set aside.

Cook the Pork

    Cook Pancetta or Guanciale

    In a large skillet over medium heat, add the diced pancetta or guanciale. Cook until the meat is crispy and golden, about 5-7 minutes. Remove from heat.

    Combine Pasta and Sauce

    Add the drained spaghetti to the skillet with the cooked pancetta or guanciale. Toss to combine, allowing the heat of the pasta to slightly cool (this prevents scrambling the eggs).

    Pour the egg and cheese mixture over the spaghetti, tossing quickly to combine. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
