Shrimp Po Boy Preparation

Prepare the Shrimp
In a bowl, combine the shrimp, salt, black pepper, and cayenne pepper. Toss to coat evenly and set aside.

Fry the Shrimp
In a large skillet, heat vegetable oil over medium-high heat. Once hot, add the breaded shrimp in batches and fry until golden brown (about 2-3 minutes per side). Remove and place on paper towels to drain excess oil.

Assemble the Po Boys
Slice the sub rolls open and spread a generous amount of spicy sauce inside. Add shredded lettuce, sliced tomato, and the fried shrimp. Drizzle more spicy sauce on top if desired.

Prepare the Potatoes
Wash the potatoes thoroughly and cut them into fry shapes (about 1/4 inch thick).

Heat Oil for Frying
In a large pot or deep fryer, heat vegetable oil to 350°F (175°C).

Fry the Potatoes
Carefully add the cut potatoes in batches to the hot oil. Fry for about 4-5 minutes or until golden brown and crispy.

Remove fries from the oil and drain on paper towels. While still hot, sprinkle with salt to taste.
