Cooking Pasta

Boil the Pasta
In a large pot, bring water to a boil. Add a generous amount of salt. Add the spaghetti and cook according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

Cook Pancetta
In a large skillet over medium heat, add the diced pancetta. Cook until crispy, around 5-7 minutes, stirring occasionally. Remove from heat and set aside.
Making the Sauce

Prepare the Carbonara Sauce
In a bowl, whisk together the eggs, grated Parmesan cheese, heavy cream, and black pepper until well combined. Set aside.

Combine Everything
In the skillet with pancetta, add the drained spaghetti. Toss to combine. Remove from heat and quickly pour the egg and cheese mixture over the pasta, tossing constantly. The residual heat will cook the eggs and create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is achieved.

Serve and Garnish
Plate the pasta carbonara and sprinkle with chopped fresh parsley. Serve immediately with additional Parmesan cheese on the side.
