Method

Preparing the Shrimp

  1. 1

    Marinate the Shrimp

In a bowl, combine the buttermilk, salt, black pepper, paprika, and garlic powder. Add the peeled and deveined shrimp and let them marinate for at least 30 minutes.

  2. 2

    Set Up Breading Station

In one shallow dish, place the all-purpose flour. In another dish, beat the eggs. In a third dish, combine the cornstarch with a pinch of salt and pepper.

  3. 3

    Bread the Shrimp

Remove the shrimp from the marinade, allowing excess liquid to drip off. Dip each shrimp first into the flour, then into the egg, and finally into the cornstarch, ensuring they are well coated.

Preparing the Fries

  1. 4

    Cut the Potatoes

Wash and peel the russet potatoes. Cut them into even strips, about 1/4 inch thick.

  2. 5

    Soak the Fries

Place the cut potatoes in a bowl of cold water for about 30 minutes to remove excess starch, then drain and pat them dry with paper towels.

Frying

  1. 6

    Heat Oil

In a large, heavy-bottomed pot, heat the oil over medium-high heat until it reaches 350°F (175°C).

  2. 7

    Fry the Fries

Carefully add the dried potato strips to the hot oil in batches, frying until they are golden brown and crispy, about 5-7 minutes. Remove them with a slotted spoon and drain on paper towels, seasoning with salt and pepper.

  3. 8

    Fry the Shrimp

In the same hot oil, fry the breaded shrimp in batches until they are golden brown and cooked through, about 2-3 minutes per side. Remove with a slotted spoon and drain on paper towels.
