Prepare the Fish

Season the Fish
Sprinkle the white fish fillets with salt and black pepper on both sides.

Make the Saucy Sauce

Combine Sauce Ingredients
In a small bowl, mix together mayonnaise, Dijon mustard, lemon juice, and garlic powder until well combined. Set aside.
Prepare the Fries

Cut the Potatoes
Wash and peel the potatoes. Cut them into sticks to form fries.

Fry the Potatoes
In a large pot or deep fryer, heat vegetable oil to 350°F (175°C). Carefully add the potato sticks in batches, frying until golden brown and crispy, about 5-7 minutes. Remove with a slotted spoon and drain on paper towels. Sprinkle with salt.
Assemble the Sandwich

Prepare the Rolls
Slice the sub rolls open but do not cut all the way through. Spread a generous amount of the saucy sauce inside each roll.

Add Lettuce and Tomato
Place the lettuce leaves and slices of tomato inside each roll.

Add the Fish
Place the cooked fish fillets on top of the lettuce and tomato in each sandwich.

Finish the Sandwich
Close the rolls and serve immediately with fries on the side.
