For the Chicken Po Boy

Prepare the Chicken
Marinate the chicken breasts in buttermilk for at least 30 minutes in the refrigerator.

Mix the Dry Ingredients
In a bowl, combine the all-purpose flour, cornstarch, paprika, garlic powder, onion powder, salt, and black pepper.

Dredge the Chicken
Remove the chicken from the buttermilk and dredge in the flour mixture until fully coated.

Fry the Chicken
Heat vegetable oil in a deep skillet over medium-high heat. Once hot, fry the chicken for about 5-7 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Assemble the Po Boy
Slice the sub rolls in half and layer the fried chicken, shredded lettuce, and sliced tomatoes inside.

Make the Sauce
In a bowl, mix together mayonnaise, hot sauce, lemon juice, and garlic powder until smooth.

Add the Sauce to the Po Boy
Drizzle the spicy sauce generously over the assembled Po Boy before closing the sandwich.
