Method

For the Chicken Po Boy

  1. 1

    Prepare the Chicken

Marinate the chicken breasts in buttermilk for at least 30 minutes in the refrigerator.

  2. 2

    Mix the Dry Ingredients

In a bowl, combine the all-purpose flour, cornstarch, paprika, garlic powder, onion powder, salt, and black pepper.

  3. 3

    Dredge the Chicken

Remove the chicken from the buttermilk and dredge in the flour mixture until fully coated.

  4. 4

    Fry the Chicken

Heat vegetable oil in a deep skillet over medium-high heat. Once hot, fry the chicken for about 5-7 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

  5. 5

    Assemble the Po Boy

Slice the sub rolls in half and layer the fried chicken, shredded lettuce, and sliced tomatoes inside.

For the Spicy Sauce

  1. 6

    Make the Sauce

In a bowl, mix together mayonnaise, hot sauce, lemon juice, and garlic powder until smooth.

  2. 7

Add the Sauce to the Po Boy

Drizzle the spicy sauce generously over the assembled Po Boy before closing the sandwich.

For the Fries

  1. 8

    Prepare the Potatoes

Peel the potatoes and cut them into fries. Rinse them under cold water to remove excess starch.

  2. 9

    Fry the Fries

Heat vegetable oil in a deep pot over medium-high heat. Once hot, fry the potatoes in batches until golden and crispy, about 4-6 minutes. Remove and drain on paper towels and season with salt to taste.
