Mix the Base
In a large mixing bowl, combine chia seeds, soy milk, matcha powder, maple syrup, and vanilla extract. Whisk thoroughly until the matcha powder is fully dissolved and the mixture is well combined.

Let it Set
Cover the bowl and refrigerate for at least 4 hours or overnight, allowing the chia seeds to absorb the liquid and create a pudding-like texture.

Prepare the Strawberries
While the pudding is setting, wash and slice the strawberries. You can also toss them with a little maple syrup if you prefer them sweeter.

Once the pudding has set, remove it from the refrigerator. Serve the chia pudding in bowls or jars, and top with the sliced strawberries.
