Prepare the Pickled Garlic Cream

Pickling the Garlic
In a small saucepan, combine garlic cloves and white vinegar. Bring to a boil, then reduce heat and simmer for 15 minutes. Remove from heat and let cool. Blend the pickled garlic and heavy cream until smooth. Season with salt to taste.
Make the Citrus Tartar Sauce

In a bowl, combine mayonnaise, lemon juice, Dijon mustard, capers, and dill. Mix well and season with salt and pepper to taste.

Breading the Fish
Set up a breading station: place flour, cornstarch, and seasoned salt and pepper in one bowl, beaten eggs in another, and panko breadcrumbs in a third. Dip each ling cod fillet first in the flour mixture, then the eggs, and finally coat with panko.

Frying the Cod
In a large skillet, heat the oil over medium-high heat. Once hot, fry the breaded cod fillets for about 3-4 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

On a serving plate, place a fried ling cod fillet, top with a slice of American cheese allowing it to melt slightly, add a dollop of citrus tartar sauce, a drizzle of pickled garlic cream, and serve with crispy chips on the side.
