Bread Preparation

Prepare the Farro
Rinse the farro under cold water and cook it in a saucepan with 4 cups of water for about 30-40 minutes until tender. Drain and let it cool.

Mix Ingredients
In a large bowl, combine the warm water, honey, and yeast. Let it sit for about 5 minutes until foamy. Add the cooked farro, flaxseed meal, whole wheat flour, olive oil, salt, and black pepper. Mix until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic.

First Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Shape the Bread
Punch down the dough and shape it into a loaf. Place it in a greased loaf pan.

Second Rise
Cover the loaf with a cloth and let it rise again for about 30 minutes.

Bake the Bread
Preheat the oven to 375°F (190°C). Bake the bread for 30-35 minutes or until golden brown and sounds hollow when tapped.

In a bowl, beat the unsalted butter until creamy. Add the Empress honey and mix until well combined. Season with Salt Spring Island sea salt to taste.
