Chocolate Cake

Prepare the Batter
Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans. In a large bowl, mix the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Add eggs, milk, oil, and vanilla. Beat on medium speed for 2 minutes. Stir in boiling water until well combined.

Bake the Cake
Pour the batter evenly into the prepared pans. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Let cool for 10 minutes in the pans, then remove from pans to cool completely on wire racks.
Chocolate Mousse

Melt the Chocolate
In a heatproof bowl, melt the semisweet chocolate over a double boiler. Allow it to cool slightly.

Whip the Cream
In a separate bowl, whip 1 cup of heavy cream with sugar and vanilla extract until soft peaks form.

Make the Chantilly
In a bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
Assembly

Assemble the Cake
Layer the chocolate cake with chocolate mousse in between. Spread the remaining mousse on top and sides of the cake. Drizzle mandarin coulis over the cake and serve with a dollop of vanilla chantilly.
