Chocolate Cake

Mandarin Coulis

Vanilla Chantilly

Method

Chocolate Cake

  1. 1

    Prepare the Batter

Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans. In a large bowl, mix the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Add eggs, milk, oil, and vanilla. Beat on medium speed for 2 minutes. Stir in boiling water until well combined.

  2. 2

    Bake the Cake

Pour the batter evenly into the prepared pans. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Let cool for 10 minutes in the pans, then remove from pans to cool completely on wire racks.

Chocolate Mousse

  1. 3

    Melt the Chocolate

In a heatproof bowl, melt the semisweet chocolate over a double boiler. Allow it to cool slightly.

  2. 4

    Whip the Cream

In a separate bowl, whip 1 cup of heavy cream with sugar and vanilla extract until soft peaks form.

  3. 5

    Combine and Fold

In another bowl, beat the egg whites until stiff peaks form. Gently fold the melted chocolate into the whipped cream, then fold in the egg whites until no streaks remain.

Mandarin Coulis

  1. 6

    Prepare the Coulis

In a saucepan, combine mandarin oranges, sugar, and lemon juice. Cook over medium heat until the mixture thickens slightly, about 10 minutes. Blend until smooth and strain if desired.

Vanilla Chantilly

  1. 7

    Make the Chantilly

In a bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.

Assembly

  1. 8

    Assemble the Cake

Layer the chocolate cake with chocolate mousse in between. Spread the remaining mousse on top and sides of the cake. Drizzle mandarin coulis over the cake and serve with a dollop of vanilla chantilly.
