    Make the Cornichon Jam

    In a small saucepan, combine the chopped cornichons, sugar, and white vinegar. Cook over medium heat, stirring occasionally, until the sugar dissolves and the mixture thickens slightly, about 10 minutes. Remove from heat and let it cool.

    Prepare the N’duja

    In a skillet over medium heat, add the N’duja sausage. Cook for 5-7 minutes, breaking it up with a spoon until it’s heated through and slightly crispy. Set aside.

    Toast the Sourdough

    In another pan, heat the olive oil over medium heat. Add the sourdough bread slices and toast until golden brown on both sides, about 3-4 minutes per side.

Assembly

    Plate the Dish

    On a serving platter, place the toasted sourdough slices. Top each slice with a generous piece of burrata cheese. Add a spoonful of the cornichon jam on top of the burrata and sprinkle with sumac, salt, and black pepper. Finally, add the crispy N’duja around the burrata for garnish.
