Smoked Corned Beef Brisket Reuben

Preparation and Cooking

    Prepare the Corned Beef

    Smoke the corned beef brisket at 225°F (107°C) for about 4-6 hours or until it reaches an internal temperature of 190°F (88°C). Let it rest before slicing.

    Prepare the Fries

    Cut the potatoes into fries and soak them in water for 30 minutes. Drain and dry them thoroughly. Heat oil in a deep fryer or heavy pot to 350°F (175°C) and fry the potatoes until golden and crispy. Season with salt and pepper.

    Assemble the Reuben

    Spread butter on one side of each slice of rye bread. On the unbuttered side, layer Swiss cheese, sliced corned beef, sauerkraut, and Thousand Island dressing. Top with another slice of rye bread, buttered side up.

    Heat a skillet over medium heat. Place the sandwiches in the skillet and grill until golden brown, about 4-5 minutes per side, and the cheese is melted.
