Preparation and Smoking

    Prepare the Marinade

    In a bowl, combine olive oil, rosemary, thyme, sage, minced garlic, lemon juice, salt, and black pepper. Mix well to form a marinade.

    Marinate the Turkey

    Place the turkey breast in a resealable plastic bag or a shallow dish. Pour the marinade over the turkey, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight.

    Prepare the Smoker

    Soak the wood chips in water for at least 30 minutes. Preheat your smoker to 225°F (107°C).

    Smoke the Turkey

    Remove the turkey from the marinade and discard the leftover marinade. Place the turkey breast in the smoker. Add the soaked wood chips to the smoker box. Smoke the turkey for about 2 to 3 hours, or until the internal temperature reaches 165°F (74°C).

    Rest and Serve

    Once cooked, remove the turkey from the smoker and let it rest for 10-15 minutes before slicing. Serve warm or chilled.
