Fry the Potatoes
Heat 2 cups of vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potato strips in batches for 5-7 minutes until golden brown. Remove with a slotted spoon and drain on paper towels. Season with salt to taste.

Make the Coleslaw
In a large bowl, combine shredded cabbage and grated carrot. In a separate small bowl, mix mayonnaise, apple cider vinegar, sugar, salt, and pepper. Pour the dressing over the cabbage and carrot, and toss to combine. Refrigerate until ready to serve.

Prepare the Batter
In a bowl, mix flour, cornstarch, baking powder, and salt. Gradually whisk in cold sparkling water until the batter is smooth and slightly thick.

Fry the Fish
Heat the remaining 2 cups of vegetable oil in a deep fryer or large pot to 350°F (175°C). Dip each fish fillet into the batter, allowing excess to drip off. Carefully place the battered fish into the hot oil and fry for about 4-5 minutes on each side until golden brown and crispy. Remove and drain on paper towels.
