Prepare the Collard Greens
Wash the collard greens thoroughly to remove any grit. Remove the tough stems and chop the leaves into bite-sized pieces.

Cook the Collard Greens
Add the chopped collard greens to the pot. Stir to combine with the onion and garlic. Pour in the vegetable broth, and add salt, black pepper, and red pepper flakes. Bring to a simmer.

Slow Cook
Cover the pot and reduce the heat to low. Allow the collard greens to simmer for 45 minutes to 1 hour, stirring occasionally, until they are tender.

Finish with Vinegar
Once the collard greens are cooked to your liking, stir in the apple cider vinegar. Adjust seasoning with additional salt and pepper if needed.
