Prepare the Brisket
In a mixing bowl, combine ground brisket, salt, black pepper, garlic powder, and onion powder. Mix until well combined.

Form the Patties
Divide the mixture into four equal portions and shape each portion into a patty, making a slight indentation in the center to prevent puffing while cooking.

Preheat the Grill
Prepare your grill for indirect cooking over oak wood to achieve a smoky flavor. Preheat to medium-high heat.

Grill the Burgers
Place the patties on the grill and cook for about 4-5 minutes on each side for medium doneness, or until the internal temperature reaches 160°F (71°C). If using cheese, place a slice on each patty during the last minute of cooking to melt.

Assemble the Burgers
Toast the burger buns on the grill if desired. Place a patty on each bun and top with lettuce, tomato, pickles, and barbecue sauce as desired.
