Preparing the Chicken

    Marinate the Chicken

    In a large bowl, combine coconut milk, soy sauce, lime juice, minced garlic, grated ginger, curry powder, salt, and black pepper. Whisk until well combined. Cut the chicken breast into bite-sized pieces and add to the marinade. Toss to coat evenly and let sit for at least 30 minutes, or up to 2 hours in the refrigerator.

    Prepare Skewers

    If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill. After marinating the chicken, thread pieces onto the skewers, about 4-5 pieces per skewer.

Making the Peanut Sauce

    Prepare Sauce Ingredients

    In a small bowl, combine peanut butter, coconut milk, soy sauce, lime juice, honey, and minced garlic. Stir until well mixed and smooth.

    Adjust Consistency

    Add water gradually to the peanut sauce until you reach your desired consistency for dipping.

Grilling the Chicken

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Grill the Skewers

    Place the chicken skewers on the grill. Grill for about 5-7 minutes on each side, or until the chicken is cooked through and has nice grill marks. Ensure the internal temperature reaches 75°C (165°F).
