Marinating Chicken

Prepare the Marinade
In a large bowl, combine soy sauce, lime juice, coconut milk, brown sugar, minced garlic, grated ginger, and salt. Mix well.

Marinate Chicken
Cut the chicken breast into bite-sized pieces. Add the chicken pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, preferably overnight.
Preparing Peanut Sauce

Make the Sauce
In a saucepan over medium heat, combine peanut butter, coconut milk, soy sauce, lime juice, brown sugar, sriracha, and water. Stir continuously until smooth and heated through. Set aside.
Skewering and Grilling

Prepare Skewers
Soak the wooden skewers in water for 30 minutes to prevent burning. This is optional but recommended.

Assemble Skewers
Thread the marinated chicken pieces onto the soaked skewers, leaving a little space between each piece.

Grill the Skewers
Preheat a grill or grill pan over medium-high heat. Grill the chicken skewers for about 6-8 minutes on each side, or until fully cooked and slightly charred.
