Method
Prepare Sticky Rice
- 1
Soak the Rice
In a bowl, rinse the 1 cup of glutinous rice under cold water until the water runs clear. Soak the rice in water for at least 4 hours or overnight.
- 2
Steam the Rice
After soaking, drain the rice and place it in a steamer lined with cheesecloth. Steam for about 30-40 minutes until the rice is tender and sticky.
Prepare Coconut Sauce
- 3
Make the Sauce
In a saucepan, combine 1 cup of coconut milk, 2 tablespoons of sugar, and 1 teaspoon of salt. Heat over medium heat, stirring until the sugar dissolves completely. Do not let it boil.
- 4
Mix with Rice
Once the rice is cooked, transfer it to a large bowl. Pour about 3/4 of the coconut sauce over the warm sticky rice. Stir gently to combine and let it sit for about 20 minutes to absorb the flavors.
Prepare Mango
- 5
Slice the Mango
Peel the 2 medium ripe mangoes and slice them into thin strips or wedges.
Serve
- 6
Assemble the Dish
To serve, scoop a portion of the sticky rice onto a plate, top with mango slices, and drizzle with the remaining coconut sauce. Sprinkle sesame seeds on top for garnish.
