Prepare the Filling

    Mix the Ingredients

    In a large mixing bowl, combine shredded chicken, corn, Colby Jack cheese, chopped spinach, chopped cilantro, ground cumin, salt, and black pepper. Mix well until all ingredients are evenly distributed.

Assemble the Egg Rolls

    Fill the Tortillas

    Take a flour tortilla and place about 1/4 cup of the filling mixture in the center. Fold in the sides and roll tightly from the bottom to the top. Repeat this process for all tortillas.

Fry the Egg Rolls

    Heat the Oil

    In a large pot or deep fryer, heat vegetable oil over medium-high heat.

    Fry the Rolls

    Once the oil is hot, carefully place 3-4 egg rolls in the oil at a time. Fry for about 3-4 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Make the Salsa

    Combine Salsa Ingredients

    In a medium bowl, combine diced tomatoes, finely chopped onion, minced jalapeño, lime juice, and salt. Stir well to combine.

    Let the salsa sit for at least 10 minutes to allow flavors to meld.
