Grill the Chicken
Preheat your grill to medium-high heat. Season the chicken breasts with salt and pepper. Grill the chicken for about 6-7 minutes on each side or until fully cooked. Remove from grill and let it rest before slicing into strips.

Prepare the Vegetables
While the chicken is grilling, dice the tomatoes, roast the corn (if using fresh or frozen), and dice the poblano chiles.

Assemble the Salad
In a large bowl, combine the mixed greens, diced tomatoes, roasted corn, black beans, diced poblano chiles, and sliced grilled chicken. Toss gently to combine.

Add Cheese and Tortilla Strips
Top the salad with shredded Monterey Jack cheese, cheddar cheese, and crispy tortilla strips.
