Cilantro Lime Dressing

Method

Salad Preparation

  1. 1

    Grill the Chicken

Preheat your grill to medium-high heat. Season the chicken breasts with salt and pepper. Grill the chicken for about 6-7 minutes on each side or until fully cooked. Remove from grill and let it rest before slicing into strips.

  2. 2

    Prepare the Vegetables

While the chicken is grilling, dice the tomatoes, roast the corn (if using fresh or frozen), and dice the poblano chiles.

  3. 3

    Assemble the Salad

In a large bowl, combine the mixed greens, diced tomatoes, roasted corn, black beans, diced poblano chiles, and sliced grilled chicken. Toss gently to combine.

  4. 4

    Add Cheese and Tortilla Strips

Top the salad with shredded Monterey Jack cheese, cheddar cheese, and crispy tortilla strips.

Dressing Preparation

  1. 5

    Make the Dressing

In a blender or food processor, combine chopped cilantro, lime juice, olive oil, honey, minced garlic, salt, and black pepper. Blend until smooth and well combined.

  2. 6

    Serve

Drizzle the cilantro lime dressing over the salad just before serving. Toss gently to coat all ingredients evenly.
