Pesto Preparation

Make the Pesto Spread
In a food processor, combine the fresh basil, pine nuts, garlic clove, and Parmesan cheese. Pulse until finely chopped.

Add Olive Oil
With the processor running, gradually add the olive oil until the mixture is smooth. Season with salt and black pepper to taste.
Panini Assembly

Prepare the Veggies
Slice the onion and tomato into thin rings.

Assemble the Panini
Spread a generous amount of the pesto on the inside of each hoagie bun. Layer the oven roasted chicken, sliced onions, tomato, fresh spinach, and shredded mozzarella cheese inside the buns.
Cooking the Panini

Preheat the Panini Press
Preheat your panini press or grill pan over medium heat.

Cook the Panini
Place the assembled paninis on the press or grill pan. Cook for about 5-7 minutes, or until the bread is golden brown and the cheese is melted.
Serving

Slice and Serve
Remove the paninis from the press, slice them in half, and serve warm.
