Preparing Tortilla Chips

Cut the Tortillas
Cut the corn tortillas into triangles to form chips.

Heat the Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until hot.

Fry the Chips
Carefully add the tortilla triangles to the hot oil and fry until they are golden brown and crispy, about 2-3 minutes per batch.

Drain and Cool
Remove the chips from the oil and place them on a paper towel-lined plate to drain excess oil.
Making Queso

Melt the Cheeses
In a saucepan over medium heat, combine the Velveeta cheese, cream cheese, diced green chilies, and milk.

Stir Constantly
Stir continuously until the cheeses are fully melted and the mixture is smooth and creamy.
Assembling the Nachos

Layer the Chips
On a large serving platter or baking sheet, spread out the fried tortilla chips in an even layer.

Add Queso
Pour the warm queso generously over the chips.

Sprinkle diced Roma tomatoes, sliced green onions, and black olives evenly over the queso. Add the cooked beef, chicken, or pork on top.

Drizzle sour cream over the nachos before serving.
